Prozymi Biolabs is developing naturally derived enzymes that break down the immunogenic fragments of gluten while leaving the rest of the protein intact. The aim is to let food manufacturers make wheat-based products that are safe for people with coeliac disease or gluten sensitivity, with better taste, texture and nutrition than conventional gluten-free alternatives and at lower cost. The company has worked with the University of Edinburgh on discovering and characterising gluten-degrading enzymes, received a SMART: SCOTLAND grant, and has taken part in IBioIC and University of Edinburgh incubator programmes.
